Inaugurated a year ago, it has already experienced significant growth, confirming its role as a reference point within Rome\u2019s design and interior architecture scene.<\/p>\n<p>The event is part of the Chez Valcucine calendar, a project developed by <a href=\"https:\/\/it.linkedin.com\/in\/lorenza-dalla-pozza-ab685726\">Zelo Networking<\/a> by Lorenza Dalla Pozza together with <a of the sea<\/strong><\/h2>\n<p>The evening\u2019s protagonist was Chef <a href=\"https:\/\/www.acciugaroma.it\/\">Federico Delmonte<\/a>, founder and creative force behind <strong><a href=\"https:\/\/www.instagram.com\/acciuga_roma\/\">Acciuga<\/a>,<\/strong> a restaurant recognised for its contemporary seafood cuisine, centred on seasonality, daily market selection and the utmost respect for ingredients.<\/p>\n<p>For Chez Valcucine, Delmonte created a menu conceived as a three-act story of the sea, interpreting the values that guide the project through the language of of squid, peach, lampascioni, goat\u2019s cheese cream and hyssop, while wellbeing was expressed through brown rice, Sciacca anchovies, cherry tomatoes and caciocavallo cheese. Sustainability was represented by a panzanella with cucumber, celery, carrot, cabbage and tuna heart, celebrating simple ingredients and a cuisine based on the mindful use of raw materials.<\/p>\n<p>The culinary experience concluded with a dessert dedicated to timelessness: lemon cr\u00e9meux, gentian, balsamic vinegar and liquorice.
