{"id":198,"date":"2008-04-23T17:49:00","date_gmt":"2008-04-23T17:49:00","guid":{"rendered":"http:\/\/www.valcucine.com\/magazine\/?p=198"},"modified":"2011-10-02T23:32:54","modified_gmt":"2011-10-02T23:32:54","slug":"la-cucina-quotidiana-lecologia","status":"publish","type":"post","link":"https:\/\/www.valcucine.com\/magazine\/2008\/04\/la-cucina-quotidiana-lecologia\/","title":{"rendered":"LA CUCINA QUOTIDIANA: l\u2019ecologia domestica della nuova gastronomia"},"content":{"rendered":"<p><a href=\"http:\/\/4.bp.blogspot.com\/_AteacxQ-HzY\/SA9cNp00TvI\/AAAAAAAAAGI\/fPlk6_ZTmgY\/s1600-h\/Panoramica_2.jpg\"><img decoding=\"async\" id=\"BLOGGER_PHOTO_ID_5192470285016911602\" style=\"CURSOR: hand\" alt=\"\" src=\"http:\/\/4.bp.blogspot.com\/_AteacxQ-HzY\/SA9cNp00TvI\/AAAAAAAAAGI\/fPlk6_ZTmgY\/s400\/Panoramica_2.jpg\" border=\"0\" \/><\/a><\/p>\n<div align=\"justify\"><\/div>\n<p><\/p>\n<div align=\"justify\"><span style=\"font-family:arial;\">Uno stile di vita sostenibile \u00e8 il risultato della combinazione di comportamenti quotidiani virtuosi e dell\u2019utilizzo di prodotti e servizi eco-compatibili: come pu\u00f2 una cucina accogliere e incoraggiare questi comportamenti, ovvero attuare una pi\u00f9 consapevole gastronomia domestica?<br \/>Per rispondere con idee, scenari e suggestioni concrete a questa domanda, si \u00e8 attivata, attraverso Consorzio <\/span><a href=\"http:\/\/www.polidesign.net\/2008\/index.php\"><strong><span style=\"font-family:arial;\">POLI.design<\/span><\/strong><\/a><span style=\"font-family:arial;\">, una collaborazione di <\/span><a href=\"http:\/\/www.valcucine.it\/\"><span style=\"font-family:arial;\"><strong>Valcucine<\/strong> <\/span><\/a><span style=\"font-family:arial;\">con il gruppo di ricerca Design e Innovazione per la Sostenibilit\u00e0, del Dipartimento INDACO del Politecnico di Milano: scopo della relazione sono la ricerca e il design di scenari di vita sostenibili ambientati in cucina.<br \/>Un\u2019idea di qualit\u00e0 attenta alla sostenibilit\u00e0, sia ambientale che sociale, non pu\u00f2 dunque interessare solo il prodotto, ma deve anche riflettersi negli stili di vita di chi lo utilizza nelle pratiche quotidiane. Ed \u00e8 proprio questa la definizione che si vuole dare di una gastronomia contemporanea, consapevole e critica nei confronti di modelli alimentari non pi\u00f9 sostenibili.<br \/>E\u2019 necessario ripensare in modo radicale ai nostri modi di approvvigionare, produrre, preparare, conservare e consumare il cibo. E\u2019 necessario, in definitiva, acquisire un nuovo \u201csaper fare\u201d in cucina, fatto di scelte, competenze e di piaceri. E l\u2019ambiente cucina non pu\u00f2 che essere protagonista e, al tempo stesso, strumento di questa trasformazione, offrendo a chi lo vive la possibilit\u00e0 di cambiare.
