Abbiamo gi\u00e0 proposto qui nell\u2019Eco Bookshop il suo primo libro <a href=\"http:\/\/www.flickr.com\/photos\/valcucine\/5387968624\/in\/set-72157625778757065\/lightbox\/\" target=\"_blank\">\u201cLA CUCINA A IMPATTO QUASI ZERO\u201d<\/a> durante una serata molto interessante e gustosa. Quando Lisa ci raccont\u00f2 di questo secondo progetto gi\u00e0 sapevamo che avremmo presentato qui anche CUCINARE IN LAVASTOVIGLIE. Come potevamo perderci l\u2019occasione di mostrare ai nostri ospiti una ricerca cos\u00ec originale.<\/p>\n<p>Perch\u00e9 \u00e8 proprio cos\u00ec, la cottura in lavastoviglie lascia a bocca aperta. \u00c8 una vera e propria VISIONE SENSIBILE, una rivoluzione culinaria che permette di risparmiare acqua ed energia cuocendo a bassa temperatura, preservando ed esaltando le propriet\u00e0 nutritive e organolettiche dei cibi.<\/p>\n<p>Lisa \u00e8 arrivata a sperimentare questa tecnica in un processo di ricerca sulla <strong>cottura a basso impatto ambientale<\/strong>. Quello che l\u2019ha spinta a scrivere un libro sono stati i risultati ottenuti, nella maggior parte dei casi, migliori rispetto alle cotture tradizionali per quanto riguarda <strong>gusto<\/strong>, <strong>profumi<\/strong> e <strong>consistenze<\/strong>. Le virt\u00f9 della cottura a bassa temperatura, infatti, sono conosciute e ampiamente utilizzate nell\u2019alta cucina. Le temperature di lavaggio delle lavastoviglie rientrano proprio nel <em>range<\/em> ideale di cottura, 55\u00b0C &#8211; 75\u00b0C e permettono di realizzare cotture lunghe e delicate con estrema facilit\u00e0 e riducendo il proprio impatto ambientale.<\/p>\n<p>Ma come si cucinano le pietanze in lavastoviglie? Laureata in Scienze Ambientali e con un Master in Management Ambientale, Lisa Casali lavora come specialista in rischi inquinamento e, nel tempo libero, come chef non professionista. Il suo sito web <a href=\"http:\/\/www.ecocucina.org\" target=\"_blank\"><strong>ecocucina.org<\/strong><\/a>, dove l\u2019autrice \u2013 con il soprannome di \u201cLisca\u201d \u2013 dispensa ricette e consigli per ridurre l\u2019impatto ambientale in cucina e preparare ricette usando gli scarti, sta diventando un cult. Con Edizioni Gribaudo ha gi\u00e0 pubblicato <strong><em>La cucina a impatto (quasi) zero<\/em><\/strong>. Collabora con diverse testate come Lifegate, Valore Alimentare e Il Fatto quotidiano, dove tiene un blog dedicato al cibo e all\u2019alimentazione dal punto di vista ambientale.
